A super quick and inspirational recipe for Menopausal Sanity! Beans & pulses are great foods for adding phytoestrogens to our diets. Menopause is the time when we need these in abundance. They not only provide a great source of protein, but they help to balance our hormones and even out those oestrogen highs and lows that can create so many mood changes & hot flushes.
1 lime, zested and juiced
1 small mango, stoned, peeled and chopped
1 small avocado, stoned, peeled and chopped
100g cherry tomatoes, halved
1 red chilli, deseeded and chopped
1 red onion, chopped
½ small pack coriander, chopped
400g can black beans, drained and rinsed
1. Simply add the lime zest and juice, mango, avocado, tomatoes, chilli and onion to a bowl
2. Stir through the coriander and beans, and enjoy a guilt free, super tasty lunch!
